Description

As I have read and studied about what is best to eat and how to successfully manage ankylosing spondylitis I realize more and more that no one is the same. This is my effort to figure out what works best for me and help those see a path that they can follow to manage their own. I'm trying out the paleo diet.
The scales will be a little different. The lower the better. For tiredness it's how many minutes I slept in after my alarm went off. (Some days its just plain hard to wake up.) Then for pain it will be how many times I woke up during the night. (For this ailment movement keeps the pain down. It's when we sit still for to long that it gets worse.) So if I can remember those numbers I will add those up. Then for a confidence boost I plan to tally up the distances I swim, bike, and run. Everyone needs to feel proud once in a while.

So apologies upfront. This is going to take me a while to get the hang of this thing. haha. I'm not exactly the most task oriented guy. Somedays you just got to roll with things. So started doing the paleo diet a couple of days ago. This is definitely going to be a bit of a challenge. So many good things to eat and get to watch people eat those delicious things, but hey, broccoli is good too!

So for today's levels:

Pain: I think I woke up around 6 or so times last night, but I can definately feel the difference already in my knees. Not quite as much pain each time I wake up.
Tiredness: 0 - well I did wake up at 6 at my alarm, actually woke up a little before, but took a two hour nap yesterday. Then at work today towards the end I was getting sleepy, but better than usual.

Biked: 7 miles. 15 min around 24 mph and then a 5 min cool down
Then a couple sets of pushups and pull-ups while I made breakfast.

So started following this 6 week plan on http://iamcrossfit.com/wp-content/themes/poptheme/files/iamCF_Paleo_Plan_Quickstart_Guide_and_Paleo_Challenge.pdf, but I get lunch everyday at work. I don't like sausage and bacon to much. So this morning I cut up a stake and sautéed onions with olive oil and then put in in spinach until it was wilted and soft.

Breakfast: Sausage stir-fry breakfast
I don't like sausage and bacon to much. Hickory smoke does sit well. So this morning I cut up a steak instead of the sausage. Quite delicious. Probably the best breakfast I've had in a while. It is:
sautéed onions with steak and then spinach. Cooked until the onions are clear and spinach wilted and soft.

Lunch: Salad with chicken and sautéed squash I think it was. The squash not my favorite. Dressing was olive oil and vinaigrette

Dinner: Missed Sundays dinner so was going to make up that one, but no sea bass at the store so I bought salmon. Good choice on my part! So I had salmon and steamed broccoli with a pinch of salt. Pretty legit. Here I used to put different spices on broccoli and all you really need is a little salt.

Simple Herb Crusted Salmon:
Salmon fillet
spoonful of coconut oil
olive oil
sea salt and pepper
fresh chopped parsley
Preheat oven to 450 and then put the salmon in some tinfoil with the coconut oil. Pour a little bit of olive oil on top with the salt and pepper and rub into the salmon. Sprinkler the parsley on top and gently rub and pat onto the top of the salmon. Cook for 15 min or until done.

Not to bad if I say so myself. To finish off the day going to play a little basketball!
